Green Juicing - What Do I Do With The Pulp?

Juices (of any kind) - It is best if juices are freshly squeezed; but if you choose bottled, canned or frozen be sure they are 100% juices and are not cocktails, drinks or "juice beverages" that are full of sugars and artificial flavorings and colours.

I have my own juicer and am on a juice cleanse at the moment. I juice daily and choose to include leafy green vegetables in all of my juice making. Normally, I use either carrots, or apples as a base, then add greens and perhaps garlic, ginger depending on what I feel like and what my body needs.

Examples would be:

  • Carrots, Kale and Spring Water
  • Apple juice, Parsley, Celery and Spring Water.

When  I have completed making the juice I am left with the vegetable/fruit pulp. I have always wondered what can be done with it as sometimes there is a lot left behind!. So here goes, I have two recipes that yourself or your family would eat and enjoy so I thought I would share them.

Orange/Carrot Muffins ( Made Using Juicing Pulp)

For  Muffins

  • 3 eggs
  • 2/3 cup sugar
  • 1/3 cup milk
  • 1/2 cup vegetable oil
  • 2 1/2 cups flour
  • 1/8 cup vanilla sugar
  • Some pulp 2 – 3 cups of carrot/apple/beet/orange pulp
  • 1/8 cup baking powder

Method:

  1. Mix eggs and sugar, add all the other ingredients and mix well.
  2. Put into muffin baking pans.
  3. Bake at 200 C. for 15 minutes.

Vegan Gluten and Lactose Veggie Crackers

  • 3 cups of veggie pulp ( I had zucchini, carrots, tomatoes, garlic,cilantro, parsley, kohlrabi, lamb's lettuce.)
  • 1/3 cup sesame seeds
  • 1/3 cup sunflower seeds
  • 1/4 cup tahini
  • 1/3 cup tomato paste
  • salt, pepper, garlic powder

Method:

  1. Mix all the ingredients well and put the mixture on baking paper on a baking sheet.Roll it out or flatten it with your hands.
  2. Bake at 150 C. for 20 minutes.
  3. Take the baking sheet out and cut the mixture into pieces.

Continue baking at 120 C. for 30 – 60 minutes.The longer in the oven, the crispier the crackers get.
